🍳 How to Make It
1. Melt the Chocolate
Place the chopped chocolate and butter in a heatproof bowl. Melt gently over a pan of simmering water, stirring until smooth. Remove from the heat and let it cool slightly.
2. Prepare the Egg Yolks
Whisk the egg yolks with the sugar and vanilla until smooth. Slowly mix them into the slightly cooled chocolate.
3. Whip the Cream
Beat the heavy cream until it forms soft peaks. Don’t over-whip it.
4. Beat the Egg Whites
In a clean bowl, beat the egg whites with a pinch of salt until they form firm peaks.
5. Combine Everything
Gently fold the whipped cream into the chocolate mixture. Then carefully fold in the beaten egg whites. Avoid stirring too aggressively—you want to keep the mousse light and airy.
6. Chill
Spoon the mousse into small serving glasses or bowls. Cover and refrigerate for at least 2–3 hours, or until set.
