🍳 How to Make It
1. Brown the Beef
Heat a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if necessary.
2. Add the Aromatics
Add the onion and garlic and cook for 2–3 minutes until softened and fragrant.
3. Add the Vegetables
Stir in the carrots, celery, potatoes, and green beans. Cook for a few minutes to let the vegetables begin to soften.
4. Simmer the Soup
Add the diced tomatoes, beef broth, Italian seasoning, paprika, bay leaf, salt, and pepper.
Bring everything to a gentle boil, then reduce the heat and cover. Simmer for about 25–30 minutes, or until the vegetables are tender.
5. Taste and Serve
Remove the bay leaf and taste the soup. Adjust the salt and pepper as needed.
