1. Make the Cookie Dough
Cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture and mix until a soft dough forms.
Cover and chill for 30 minutes.
2. Prepare the Pecan Filling
Combine the chopped pecans, brown sugar, syrup, melted butter, vanilla, and salt.
Stir until everything is evenly coated.
3. Shape the Cookies
Preheat the oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Roll the chilled dough into small balls, about 1 tablespoon each.
Place them on the baking sheet and gently press an indentation into the center of each cookie using your thumb or the back of a small measuring spoon.
