1. Roast the Butternut Squash
Preheat the oven to 425Β°F (220Β°C).
Toss the cubed butternut squash with olive oil, salt, and pepper.
Spread it on a baking sheet and roast for 25β30 minutes, turning once, until tender and caramelized around the edges.
2. Cook the Pasta
Bring a large pot of generously salted water to a boil.
Cook the pasta until al dente according to the package directions.
Before draining, reserve about 1 cup of pasta water.
