🌯 Tortilla Wraps with Ground Beef
These easy ground beef tortilla wraps are juicy, flavorful, and perfect for a quick lunch or dinner. The seasoned beef is combined with fresh vegetables, cheese, and a creamy sauce, then wrapped in a warm tortilla.
Ingredients
For the Ground Beef
- 1 lb (450 g) ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp ground cumin
- ½ tsp chili powder
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp dried oregano
- 2 tbsp tomato paste
- ¼ cup water
For the Wraps
- 6 large flour tortillas
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 tomato, diced
- 1 cup shredded lettuce
- ½ small red onion, thinly sliced
- ½ cup sweet corn, optional
- ½ cup sliced or diced avocado, optional
- Fresh cilantro or parsley, optional
Quick Sauce
- ½ cup sour cream or Greek yogurt
- 2 tbsp mayonnaise
- 1 tbsp lime or lemon juice
- ½ tsp garlic powder
- Pinch of salt
- A little hot sauce, optional
Instructions
1. Cook the Beef
Heat the olive oil in a large skillet over medium-high heat.
Add the chopped onion and cook for2–3 minutes until it begins to soften.
Add the garlic and cook for about 30 seconds.
Add the ground beef and cook for 6–8 minutes, breaking it apart with a wooden spoon, until browned and cooked through.
Drain excess fat if necessary.
2. Season the Beef
Add the paprika, cumin, chili powder, oregano, salt, black pepper, and tomato paste.
Pour in the water and stir everything together.
Cook for another 2–3 minutes, allowing the seasoning to coat the beef and the mixture to become slightly saucy.
Taste and adjust the seasoning.
3. Make the Sauce
In a small bowl, combine the sour cream or Greek yogurt, mayonnaise, lemon or lime juice, garlic powder, and salt.
Add hot sauce if you like some heat.
Mix until smooth.
4. Warm the Tortillas
Heat each tortilla in a dry skillet for about 15–20 seconds per side.
Keep the warmed tortillas covered with a clean kitchen towel so they remain soft and flexible.
5. Assemble the Wraps
Place a tortilla on a flat surface.
Add:
- A layer of shredded cheese
- Seasoned ground beef
- Lettuce
- Tomato
- Red onion
- Corn or avocado, if using
- A spoonful of the creamy sauce
- Fresh cilantro or parsley
Don’t overfill the tortilla, or it will be difficult to roll.
6. Roll the Wrap
Fold the left and right sides toward the center.
Then fold the bottom edge over the filling and roll tightly upward, keeping the filling inside.
For a crispy wrap, place it seam-side down in a lightly oiled skillet and cook for 1–2 minutes per side until golden brown.
🌶️ Make It Spicy
For a hotter version, add:
- 1 finely chopped jalapeño to the beef
- Extra chili powder
- Crushed red pepper flakes
- Hot sauce
- A pinch of cayenne pepper
🧀 Cheesy Version
For an especially cheesy wrap, add extra cheddar or Monterey Jack while the beef is still hot. You can also place the assembled wraps in a skillet for a couple of minutes until the tortilla becomes crisp and the cheese melts.
🥑 Healthier Version
For a lighter meal, use:
- Lean ground beef
- Whole-wheat tortillas
- Greek yogurt instead of mayonnaise
- Plenty of lettuce and tomatoes
- Avocado for healthy fats
- Extra vegetables
- Less cheese
You can also replace some of the beef with black beans or kidney beans to increase the fiber.
Storage
Keep the cooked beef in an airtight container in the refrigerator for up to 3–4 days. Store the vegetables and sauce separately and assemble the wraps when you’re ready to eat them.
Best tip: Keep the beef flavorful and slightly juicy, but not watery. A little sauce makes the wrap delicious; too much liquid will make the tortilla soggy.
