Turn chuck into a roast so tender, no one will know it took very little effort

Easy Tender Chuck Roast

Turn an affordable chuck roast into a tender, flavorful dinner with very little hands-on work. Slow cooking allows the beef to become incredibly soft while the onions and broth create a rich, savory gravy.

Ingredients

  • 3–4 lb chuck roast
  • 1 packet onion soup mix
  • 1 can cream of mushroom soup
  • 1 cup beef broth
  • 1 onion, sliced
  • 1 teaspoon garlic powder
  • Salt and black pepper
  • 1 tablespoon oil

Instructions

  1. Season the chuck roast generously with salt, pepper, and garlic powder.
  2. Heat the oil in a large skillet and sear the roast for 2–3 minutes per side until browned.
  3. Place the sliced onion in the bottom of a slow cooker and set the roast on top.
  4. Spread the cream of mushroom soup over the roast. Sprinkle with the onion soup mix and pour the beef broth around the sides.
  5. Cover and cook on LOW for 8–9 hours, or until the beef is very tender and easily pulls apart with a fork.
  6. Let the roast rest for about 10 minutes before slicing or shredding.
  7. Spoon the flavorful juices and gravy over the beef and serve with mashed potatoes, carrots, or your favorite vegetables.
