Teriyaki Chicken and Pineapple Foil Packet

Teriyaki Chicken and Pineapple Foil Packets

These Teriyaki Chicken and Pineapple Foil Packets are an easy, flavorful dinner with tender chicken, juicy pineapple, colorful vegetables, and a sweet-and-savory teriyaki glaze. Everything cooks together inside the foil, keeping the chicken moist and making cleanup simple.

Ingredients

  • 1½ pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1½ cups pineapple chunks, fresh or canned
  • 1 red bell pepper, sliced
  • 1 small zucchini, sliced
  • ½ cup teriyaki sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon ground ginger
  • Salt and black pepper, to taste
  • 2 green onions, sliced, for garnish
  • 1 tablespoon sesame seeds, optional
  • Heavy-duty aluminum foil

Instructions

  1. Preheat the oven: Heat the oven to 400°F (200°C). Cut four large pieces of heavy-duty aluminum foil and place them on a flat surface.
  2. Prepare the chicken: Cut the chicken into evenly sized pieces so they cook at the same rate. Place the chicken in a bowl and toss it with the olive oil, garlic powder, ginger, salt, and black pepper.
  3. Add the vegetables and pineapple: Add the bell pepper, zucchini, and pineapple chunks to the chicken. Pour in the teriyaki sauce and gently toss everything together until well coated.
  4. Make the packets: Divide the chicken mixture evenly among the foil sheets. Bring the long sides of the foil together and fold them over, then fold the edges tightly to create sealed packets. Leave a little room inside for the steam to circulate.
  5. Bake: Place the foil packets on a baking sheet and bake for approximately 25–30 minutes, or until the chicken is fully cooked and reaches 165°F (74°C) internally.
  6. Open carefully: Remove the packets from the oven and let them rest for a few minutes. Carefully open the foil away from your face because hot steam will escape.
  7. Garnish and serve: Sprinkle the packets with sliced green onions and sesame seeds if desired. Spoon some of the flavorful teriyaki juices over the chicken before serving.

Serving Ideas

Serve these foil packets over steamed white rice, brown rice, or noodles. You can also add extra pineapple or steamed vegetables on the side for a complete meal.

Helpful Tips

Cut the chicken and vegetables into similar-sized pieces for more even cooking. If using canned pineapple, drain it well before adding it to the packets so the sauce does not become too watery.
