Cheesy Chicken Fritters
These cheesy chicken fritters are crispy and golden on the outside, tender inside, and packed with juicy chicken and melted cheese. They’re great for lunch, dinner, or as an easy snack with your favorite dipping sauce.
Ingredients
- 2 cups cooked chicken, finely chopped or shredded
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 2 large eggs
- ½ cup all-purpose flour
- ¼ cup mayonnaise
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon Italian seasoning
- 2 tablespoons chopped fresh parsley, optional
- 2–3 tablespoons vegetable oil, for frying
Instructions
- Prepare the chicken: If using cooked chicken breasts or thighs, chop them into very small pieces. Finely chopped chicken helps the fritters hold together.
- Mix the ingredients: In a large bowl, combine the chicken, mozzarella, cheddar, eggs, flour, mayonnaise, green onions, garlic, salt, pepper, paprika, and Italian seasoning.
- Check the mixture: Stir everything until well combined. The mixture should be thick enough to scoop with a spoon. If it seems too loose, add another tablespoon of flour.
- Heat the oil: Add enough oil to lightly coat the bottom of a large skillet. Heat over medium heat.
- Form the fritters: Scoop about 2 tablespoons of the chicken mixture into the hot skillet for each fritter. Flatten gently with the back of the spoon.
- Cook until golden: Fry for about 3–4 minutes per side, turning carefully, until the outside is golden brown and the fritters are heated through.
- Drain: Transfer the cooked fritters to a paper towel-lined plate to remove excess oil.
- Serve hot: Let them cool for a couple of minutes so the cheese isn’t extremely hot, then serve.
Easy Dipping Sauce
Mix together:
- ½ cup mayonnaise
- 2 tablespoons sour cream
- 1 teaspoon lemon juice
- ½ teaspoon garlic powder
- A pinch of black pepper
Helpful Tip
For extra-crispy fritters, make sure your cooked chicken isn’t watery and don’t overcrowd the skillet. Cook them in batches if necessary so each fritter has enough space to brown properly.
