Slow-Cooker Buttery Potatoes and Caramelized Onions
These slow-cooker buttery potatoes are tender, rich, and full of comforting flavor. The potatoes slowly cook with sweet caramelized onions, butter, and herbs, making an easy side dish that requires very little hands-on preparation.
Ingredients
- 2½ pounds baby potatoes, halved
- 2 large yellow onions, thinly sliced
- 5 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon paprika
- Salt and black pepper, to taste
- ¼ cup chicken or vegetable broth
- 2 tablespoons fresh parsley, chopped, optional
Instructions
- Prepare the potatoes: Wash the baby potatoes thoroughly and cut larger ones in half so they cook evenly.
- Prepare the onions: Thinly slice the onions. For deeper flavor, you can briefly sauté them in a skillet with a little butter until they begin to soften and turn golden.
- Layer the slow cooker: Place the potatoes and sliced onions into the slow cooker. Add the minced garlic, thyme, parsley, paprika, salt, and black pepper.
- Add the butter and broth: Cut the butter into small pieces and scatter it over the potatoes and onions. Pour the broth around the sides of the mixture.
- Cook: Cover and cook on LOW for 5–6 hours or on HIGH for 2½–3½ hours, until the potatoes are tender when pierced with a fork.
- Stir gently: Once the potatoes are cooked, gently stir everything together so the buttery sauce coats the potatoes evenly. Avoid stirring too aggressively, as the potatoes can break apart.
- Finish and serve: Taste and adjust the seasoning if needed. Sprinkle with fresh parsley before serving.
Helpful Tips
For the best texture, choose small waxy potatoes that hold their shape well during slow cooking. If you want the onions to have a richer caramelized flavor, cook them separately until golden before adding them to the slow cooker.
Serving Ideas
These buttery potatoes pair wonderfully with roasted chicken, baked fish, steak, meatloaf, or grilled vegetables. They also make a comforting addition to a holiday or family dinner.
