Taco Bell Enchirito (Copycat Recipe)

    • 1 cup enchilada sauce (store-bought or homemade)
    • Optional: sliced black olives or diced green chilies

Instructions

1. Prepare the Beef Filling

  1. In a skillet over medium heat, sauté onions until translucent.
  2. Add ground beef, breaking it apart, and cook until browned.
  3. Add beans, chili powder, cumin, garlic powder, salt, and pepper. Mix well and cook 2–3 minutes.

2. Assemble the Enchirito

  1. Preheat oven to 180°C / 350°F.
  2. Spread a spoonful of enchilada sauce in a small baking dish or on a plate.
  3. Place a tortilla, add beef and bean mixture, sprinkle with cheese, and fold ends over like a burrito.
  4. Pour additional enchilada sauce over the top and sprinkle more cheese.

3. Bake

  • Bake for 15–20 minutes until cheese is melted and bubbly.

4. Serve

  • Garnish with diced onions, olives, or a dollop of sour cream if desired.
  • Enjoy warm—just like the original Taco Bell Enchirito!

Tips for Extra Authenticity

  • Use mild red enchilada sauce like Taco Bell used.
  • A slightly soft tortilla works best to mimic the classic texture.
  • For a richer flavor, stir a bit of cheddar cheese into the beef mixture before rolling.
