  • 2 ¼ tsp (1 packet) active dry yeast

  • 2 tbsp sugar

Instructions

1. Activate the Yeast

  1. In a small bowl, mix warm milk, sugar, and yeast.
  2. Let it sit 5–10 minutes until it becomes foamy.

2. Make the Dough

  1. In a large bowl, combine flour and salt.
  2. Add melted butter and the foamy yeast mixture.
  3. Mix until a soft dough forms.
  4. Knead for 6–8 minutes on a floured surface until smooth and elastic.

3. First Rise

  1. Place dough in a greased bowl.
  2. Cover with a clean towel and let it rise for 1–1.5 hours, or until doubled in size.

4. Shape the Rolls

  1. Punch down the dough and divide it into 12 equal pieces.
  2. Flatten each piece slightly, sprinkle or fold in cheddar cheese, and shape into rolls.
  3. Place rolls on a greased baking sheet, leaving space to expand.
  4. Optional: brush tops with a beaten egg and sprinkle extra cheddar on top.

5. Second Rise

  • Cover and let the rolls rise for 20–30 minutes.

6. Bake

  • Preheat oven to 375°F (190°C).
  • Bake rolls for 15–20 minutes, until golden brown.

7. Serve

  • Let cool slightly before serving.
  • Perfect warm with butter or as a side to soup or chili.
