Caramel Chocolate Chip Cookie Bars

Ingredients (Makes 16 bars)

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup chocolate chips (semi-sweet or milk chocolate)
  • 1 cup soft caramel bits or chopped caramel candies
  • Optional: sea salt for sprinkling

Instructions

1. Preheat Oven

  • Preheat oven to 350°F / 175°C
  • Grease a 9×13-inch baking pan or line with parchment paper

2. Mix Wet Ingredients

  • In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth.
  • Add eggs and vanilla, mix until fully combined.

3. Add Dry Ingredients

  • In a separate bowl, whisk flour, baking soda, and salt.
  • Gradually stir into wet mixture until just combined.

4. Fold in Chocolate & Caramel

  • Gently fold in chocolate chips and caramel bits.

5. Bake

  • Spread batter evenly into prepared pan.
  • Bake 25–30 minutes or until edges are golden and center is set.
  • Optional: sprinkle sea salt on top immediately after baking for a salted caramel twist.

6. Cool & Slice

  • Allow to cool completely in pan before cutting into bars.

Tips & Variations

  • Chewier bars: Slightly underbake by 2–3 minutes
  • Double chocolate: Add ½ cup cocoa powder to flour
  • Extra gooey: Drizzle with caramel sauce after baking
