Cheesy Carrot Flatbreads

Ingredients (Makes 6–8 flatbreads)

  • 2 cups finely grated carrots (about 3 medium carrots)
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp baking powder
  • 1–2 tbsp olive oil (for cooking)

Instructions

1. Make the Dough

  1. In a large bowl, combine grated carrots, cheese, egg, garlic powder, salt, pepper, and baking powder.
  2. Add flour gradually and mix until a soft dough forms.

2. Shape the Flatbreads

  • Divide dough into 6–8 balls.
  • Roll or press each into a thin round (about ¼ inch thick).

3. Cook

  • Heat olive oil in a skillet over medium heat.
  • Cook flatbreads 2–3 minutes per side until golden brown and cooked through.

4. Serve

  • Serve warm as a side, snack, or base for toppings.
  • Optional: sprinkle with herbs, chili flakes, or a drizzle of honey.

Tips

  • Squeeze excess moisture from carrots for crispier flatbreads
  • Swap half the flour for whole wheat if desired
  • Great topped with cream cheese, hummus, or avocado

Oven Option

  • Bake at 400°F / 200°C for 12–15 minutes, flipping once.
