Vanilla Custard Cream Squares

What They Are

Light pastry or cake layers filled with thick vanilla custard cream, often finished with powdered sugar or a thin glaze. Think Napoleon meets custard slice.


Ingredients

For the custard cream

  • 2 cups whole milk
  • ½ cup sugar
  • 4 egg yolks
  • ¼ cup cornstarch
  • 2 tbsp butter
  • 2 tsp vanilla extract
  • Pinch of salt

For the layers

Option 1 (classic & easy):

  • 2 sheets puff pastry (thawed)

Option 2 (softer cake-style):

  • 1 simple sponge cake, baked and sliced in half horizontally

Instructions

1. Make the Vanilla Custard

  1. Heat milk in a saucepan until warm (not boiling).
  2. In a bowl, whisk egg yolks, sugar, cornstarch, and salt until smooth.
  3. Slowly pour warm milk into the egg mixture while whisking.
  4. Return mixture to the saucepan and cook over medium heat, whisking constantly, until thick.
  5. Remove from heat, stir in butter and vanilla.
  6. Cover with plastic wrap (touching the surface) and cool completely.

2. Prepare the Layers

If using puff pastry:

  1. Bake pastry sheets at 400°F (200°C) for 12–15 minutes until golden and crisp.
  2. Cool completely.

If using sponge cake:

  • Bake, cool, and slice into two even layers.

3. Assemble

  1. Place one pastry or cake layer on a tray.
  2. Spread custard evenly over the base.
  3. Top with the second layer.
  4. Refrigerate at least 2–4 hours (overnight is best).

4. Finish & Serve

  • Dust with powdered sugar, or
  • Add a thin vanilla or chocolate glaze
  • Slice into neat squares with a sharp knife

Tips for Perfect Custard Squares

  • Chill well before cutting for clean edges
  • For extra richness, fold ½ cup whipped cream into cooled custard
  • Use a serrated knife for puff pastry layers

  • Chocolate custard (add cocoa)
  • Lemon custard (add zest + juice)
  • Coffee custard (espresso powder)
  • Coconut milk custard (dairy-free option)
