Ingredients (makes 4 flatbreads)

  • 1 cup grated carrot (about 2 medium carrots)
  • 1 cup all-purpose flour (can use whole wheat for a healthier version)
  • ½ cup grated cheese (cheddar, mozzarella, or your favorite)
  • 2 tbsp yogurt (optional, for softness)
  • 1 tsp baking powder
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper or chili flakes (optional, for a kick)
  • 2–3 tbsp oil (plus extra for cooking)

Instructions

  1. Prepare the Dough
    • In a bowl, combine the flour, baking powder, salt, and pepper.
    • Add the grated carrot, cheese, and yogurt. Mix well.
    • Gradually add 2–3 tbsp oil (or water if needed) and knead into a soft, non-sticky dough. Let it rest for 10–15 minutes.
  2. Shape the Flatbreads
    • Divide the dough into 4 equal portions.
    • Roll each portion into a small ball, then flatten into a round or oval flatbread (about ¼ inch thick).
  3. Cook the Flatbreads
    • Heat a non-stick pan or skillet over medium heat.
    • Place one flatbread on the pan and cook for 2–3 minutes until bubbles appear. Flip and cook the other side until golden brown.
    • Brush lightly with oil if desired.
  4. Serve
    • Enjoy warm with yogurt, chutney, or a fresh salad.

Tips

  • Add herbs like cilantro, parsley, or oregano for extra flavor.
  • For a spicier version, mix in finely chopped green chili or smoked paprika.
  • These flatbreads can also be baked at 180°C (350°F) for 12–15 minutes if you prefer.
